Pepper Lunch Inspired Beef Rice : So I quickly whipped up a hearty meal for the adults (and kiddos, though they had pie) with beef, cooked rice and plenty of corn! 🌽

RECIPE : Cook rice and set aside, prepare sliced beef 🐮 (I buy mine from #Meidiya supermarket, shabu shabu or sukiyaki cut, both are fine) Steam Japanese sweet corn (frozen, from Meidiya too) You can either use Teriyaki sauce, or I used some Japanese Steak sauce topped with sesame seeds. Turn on the @brunohotplatesg, and pour sauce over, add a knob of butter, sprinkle black pepper and @liloikanbilis mushroom powder over and mix beef and rice together. Cook beef to your preferred done-ness, leave rice for a longer time if you like “crispy” parts 😍 Simple and perfect if you’re hosting friends over! 😋

Về đường trong phản ứng Maillard
Nếu bạn có tìm hiểu một chút, sẽ biết rằng đường và protein là 2 thành phần cần thiết để phản ứng Maillard khiến cho miếng steak hay rau củ xém nâu lại trước nguồn nhiệt và trở nên đậm đà hơn có thể diễn ra. Hôm nọ, có bạn hỏi mình rằng trong xương không tồn tại đường, vậy phản ứng Maillard làm sao diễn ra được? Kể ra nghe xong câu hỏi thì cũng mông lung và mất tự tin phết vì đúng là những gì mình biết về Maillard vẫn khá mang tính rập khuôn chứ chưa đi vào bản chất của vấn đề. Vậy là mình đã quyết định tự chữa ngu và tìm được một vài thông tin khá thú vị.
Trong bài viết của tác giả Robert Wolke - 1 nhà khoa học thực phẩm viết ở mục Food 101 được xuất bản trên tờ The Washington Post năm 2006 có nói:
“When we sear a steak, for example, certain parts of the protein molecules (the so-called amino parts) interact with so-called carbonyl groups, which are parts of sugar molecules. . . . A carbonyl group is indeed a certain grouping of atoms found in sugar molecules. But it also is found in many other kinds of molecules, including the meat’s very own fats and proteins. The Maillard browning process can use the carbonyl groups that are inherent in the meat; it does not require sugars.”
Tạm dịch là:
"Khi chúng ta áp chảo một miếng steak, giả dụ vậy nhé, một phần nhất định của phân tử protein (phần được gọi là phần amin) phản ứng với thứ được gọi là các nhóm carbonyl, chính là thành phần để làm ra các phân tử đường... Nhóm carbonyl thực ra là một nhóm các nguyên tử cấu thành các phân tử đường. Nhưng, nó cũng có thể được tìm thấy trong nhiều loại phân tử khác, bao gồm cả chất béo và protein của thịt. Quá trình tạo xém nâu trong phản ứng Maillard có thể sử dụng các nhóm cacbonyl vốn có trong thịt; nó không hề cần đường. "
Vậy có thể kết luận ngắn gọn như sau: phản ứng Maillard muốn diễn ra được thì chính xác hơn là cần một phần của đường (carbonyl) chứ không phải toàn bộ các thành phần của đường. Vậy nên nhìn vậy chứ không phải vậy, ngay kể cả những thực phẩm dù chẳng chứa chút đường nào thì phản ứng Maillard tạo hương vị thơm ngon và màu sắc đẹp mắt vẫn có thể diễn ra như thường, nhờ sự tồn tại của carbonyl trong những hợp chất khác không phải đường.

Among Japanese beef, we are particular about A5 and A4 rank cows (heifers, which are characterized by softer meat quality). Cows have a finer meat quality than bulls, so they contain beautiful sashimi. To that steak shop that I've always been interested in! We visited "Steak Salon Cowboys" in Ito City, Shizuoka Prefecture. The shop is located along Route 135, and there is also the "Yoshida family" that you often visit nearby. I'm grateful that you can eat hearty steaks and hamburgers, and you can finely select the number of grams and the parts you can get. I have enjoyed wild meat dishes. Please have a look!

For this episode, we went down to The Feather Blade at Tanjong Pagar to destroy a MASSIVE Feather Blade Steak Platter! The Feather Blade specialises in a single cut of steak, the flat iron. There are only 2 mains at The Feather Blade – 200g of grilled flat iron steak ($21++) and a Japanese-inspired Gyudon Bowl ($28++) with marinated flat iron steak.
My platter consisted of 5 steaks, 2 gyudon bowls, 5 foie gras, 5 scallops, 3 servings of potatoes, 2 bowls of spinach, 2 bowls of corn and 2 off-the-menu burgers. The owner, who also does food photography, masterfully arranged the food into a beautiful display.
Every piece of beef served was cooked beautifully to a medium rare, including the patties. The steak was mostly tender with a bit of bite to it while bursting with flavour. The gyudon steak was marinated in yakiniku sauce, making it slightly sweet and pairing wonderfully with the flavoured gyudon rice.
Each dish was elevated in some way, even the sides. The corn had smoked cream, the spinach was spiced and had cheese added and the potatoes were cooked in beef fat. The secret menu item, their beef burger, was made with beef trimmings and sauced with bearnaise. It was a delicious way to use up leftover parts of beef. They also offer sauces, including unique options like wasabi cream and uni butter, to go with your steak.
Protein-heavy challenges are usually a struggle for me but the food here was worth the effort. Places that specialise in certain cuisines/dishes usually catch my eye and the expertise here in the way they treat their flat iron cut (and their interesting sides and sauces) really shows. They also have a bar where you can pair your meal with refreshing alcoholic beverages. Do visit The Feather Blade for a mouth-watering steak feast!
